Rich dark fruit cake # 4 is even better than fruit cake #3. We had friends for dinner last night. Somehow, for dessert we ended up with fruit crumble, rich dark fruitcake, a Bundt cake, cream, and ice-cream. Ahem. It’s a wonder we managed to walk away from the table. However, the fruit cake, made yesterday afternoon, was the favorite.

PREPARATION TIME: 20 minutes
WAITING TIME: 2 or 3 hours
COOKING TIME: 3 hours
MAKES: 1 large cake (9.5 inches diameter by 2.5 inches deep)

This WAS it.* The fabulous rich, dark, sumptuous fruit cake we will have for Thanksgiving. We haven’t tried eating it, yet. Generally speaking, they are better left for a few days wrapped in aluminimum foil. I had the forethought to make two bara briths at the same time. This is the only way I can guarantee to keep my family away from the fruit cake.

* It was delicious. However, it has been usurped as the best fruit cake by rich dark Christmas fruit cake #4.

I am still on a mission to create a superior rich dark fruit cake. This is the second one I have felt worthy of record. Small quantities of ingredients were used because this was a trial run. A precursor to the fabulous rich, dark, sumptuous fruit cake (#3) we will have for Thanksgiving.

PREPARATION TIME: 15 minutes
COOKING TIME: 1.0 hours (add 30 minutes each time you double the ingredient quantities)
MAKES: 1 small cake 8 inches diameter
