I’ve been begging Mum to make some of this green split pean and ham soup for weeks. She finally agreed to make it as long as I helped. The soup was surprizingly easy and simple to make but it does take some time to boil. It is very green.
My mum makes variations on this with lentils or black-eyed beans and bacon. Come to think of it, she makes soup out of pretty much anything. Leek soup is another family favorite, along with broccoli and cheddar (not MY favorite).
PREPARATION TIME: 10 minutes
COOKING TIME: 1 hour
SERVES: Lots of people
Ingredients :
- 1 Large onion
- 2 Tbl. olive oil
- 1 lb. dried split green peas
- 1 lb. cooked Ham
- Ground black pepper to season
Directions:
- Dice the onions and ham.
- Cook diced onions and ham in olive oil on high heat until lightly browned. Stir occasionally.
Add the split green peas, pepper to season, and fill saucepan 3/4 full with water- Bring to boil on high heat then turn down to medium, high heat and boil for 45 min. to an hour. Stir occasionally.
- Rmeove from heat and blend slightly with a hand blender.
- Serve in bowl with (or without) Tabasco to taste.
